Inspired by traditional Filipino ingredients, this dish pairs steak and rice with adventurous ingredients like Kiwi and Kimchi, to create an umami rich take on a classic.

Ingredients (4 servings)

SPINALIS DORSI STEAK

  • 1.25 # (one whole cap) Beef Spinalis (Ribeye Cap)
  • 3 T Special dark mushroom flavored soy sauce
  • 1T Sesame oil
  • 2T Minced garlic
  • 1T Ground black pepper

ROASTED PEPPER AND KIMCHEE PUREE

  • 1 Red bell pepper
  • ½ cup Kimchi cabbage
  • 8 coves Peeled garlic
  • 1 cup Vegetable oil (or grapeseed oil)
  • ½ T MSG
  • 1 T Ultratex

RICE CAKE SAUSAGE

  • 1 cup Rice flour
  • 2 T Porcini powder
  • ½ T Msg
  • 2 tsp Bulls Bay smoked salt
  • 1 cup Warm Water
  • ½ tsp Sichuan Peppercorn Oil
  • ½ tsp Garlic oil

QUICK KIMCHI’D KIWI

  • 4 Kiwi
  • 1 large Korean pear large diced
  • 2T Fish sauce
  • 1T Gochugaru
  • 1T Peeled garlic
  • 1t Peeled ginger

PARMESAN CRISP

  • ¼ lb Grated parmesan

FINAL ASSEMBLY

  • 1/8 oz Micro Arugula
  • 1/8 oz Micro Perilla (Shizo)
  • 3 tsp Bulls bay smoked salt
