Japanese Pancake

The pancake will be cooked by pouring the batter into a ring mold on a hot griddle, until it gets fluffy. The pancake will be topped with a parmesan chip and will sit on top of a sweet yellow corn chawanmushi and a small amount of ramp puree. Plated around the pancake will be a stream of soy glaze, seared king trumpet mushroom "scallops", small dots of spicy mustard, extra corn chawanmushi and ramp puree, tangy mustard seeds, fresh daikon dressed in a light sesame-lemon oil, mint, tai to, mizuna, seasoned watercress and a Japanese "everything" spice parmesan crisp.

Ingredients (4 servings)

Sorgum Pancake

  • 2 Egg Yolks
  • ¼ cup Sugar
  • ½ cup Dashi
  • 1 cup Sorghum Flour
  • 2T Almond Flour
  • ½ t Salt
  • ¼ t Baking Soda
  • 1t Baking Powder
  • 4 Egg Whites
  • 4T Grated/Shredded Parmesan

Veg Dashi

  • 2oz Kombu
  • 1.5in Fresh Ginger
  • 2 Garlic Cloves
  • 1 Meyer Lemon, Peel
  • 1sprig Rosemary
  • 4 cups Water
  • Corn Cob Scrap
  • Mushroom Scrap
  • Ramp Scrap

Corn“Chawanmushi”Pudding

  • 4 Sweet Yellow Corn cut into loose kernels
  • 2 Yolks
  • 1T Salt
  • Dashi, as needed

Pickled Mustard Seeds

  • 1 cup Yellow Mustard Seeds
  • 1 cup Rice Wine Vinegar
  • ¾ cup Water
  • ¾ cup Mirin

Spicy Mustard

  • 6T Hot Oriental Mustard Powder
  • 6T Water

Ramp Puree

  • ½ lb Ramps, whites reserved for dashi
  • EVOO
  • Salt

Everything Parm Crisp

  • ½ cup Shredded Parm
  • ½ cup Grated Parm
  • 2T White Sesame
  • 1T Black Sesame
  • 1T Korean Chili Powder
  • 1T Poppy Seed
  • 2T Onion Flakes
  • 1T Garlic Flakes
  • 1T Nori Flake
  • 1T Orange Zest

King Trumpet “Scallops”

  • 1 ½ lb King Trumpet Mushrooms
  • Cornstarch
  • Oil
  • Salt

Dashi Glaze

  • ½ cup Dashi
  • ¼ cup Tamari
  • 2T Sugar
  • 1T Sesame Oil
  • 1T Cornstarch
  • 2T water

Daikon

  • ¼ lb Daikon
  • 2 cup water
  • 1 cup Rice Wine Vinegar
  • Smashed Garlic
  • Thai Chili
  • Ginger

Watercress and Mizuna

  • ¼ lb Watercress
  • ¼ lb Mizuna
  • Olive oil
  • Lemon Zest
  • Salt
