Egusi Soup

Egusi is a kind of soup thickened with variety of vegetable leaf, seasonings, and meat.

Ingredients

  • 200g (1 1/2 cups) of Egusi seed (Melon seed, can substitute pumpkin seed)
  • 400g (1 pound) of beef/chicken
  • 50g1 3/4 oz. () of cooked and boned stock fish pieces
  • 45ml (3 tbsp) of ground dried crayfish
  • 1 small bunch of Ugwu or bitter leaves
  • 50ml(1/4 cup) of palm oil
  • 1 small onion
  • AJI-NO-MOTO®, umami seasoning
  • 4 large fresh tomatoes
  • 1 tsp ground chili powder

For Meat

  • 1 small onion
  • 2 garlic cloves
  • 2 seasoning cubes
  • 1 tsp curry
  • 1 tsp dry thyme
  • Salt, to taste
  • AJI-NO-MOTO®, umami seasoning
