Soba, buckwheat noodles served with scallion nanban sauce
The thick soy sauce in Kaeshi and ingredients, such as
chicken and leeks give umami to the dipping sauce.

- Soba for 4 persons
- 280g chicken meat
- 2 large scallions
- 50cc dark soy sauce
- 20cc thick soy sauce
- 10g sugar
- 70cc mirin
- 500cc thick katsuo dashi
- 50cc sake
- Sansho as you like

Prepare “kaeshi,” a part of the dipping sauce with the dark soy
sauce, thick soy sauce, sugar and mirin. Boil them up. (Kaeshi)
Cut thick scallions into 5 cm lengths.
Dilute 1 with thick katsuo dashi and sake.
